MeatLoaf with Ceamy Tomato SauceIngredients
1 – Onion, Diced finely, divided
2 tsps – Minced Garlic
2 – Tomatoes, Diced
1 tbsp – red wine vinegar
1 can – Cream of Mushroom Soup
1½ lbs – Ground Beef or Ground Turkey
1 cup – Button Mushrooms
1 – Bell Pepper, Diced
1/4 cup – Flour
Salt and pepper to taste
Worcestershire Sauce to taste

Tomato Sauce
Heat frying pan on medium for 2 minutes.  Add ½ stick of butter until it bubbles.  Add 1 tsp minced garlic, tomatoes, ½ of the onion and salt/pepper. Saute it with the vinegar to reduce the contents. Add the cream of mushroom soup and stir well. While stirring add Worcestershire sauce to taste, reduce heat to low, and let it simmer.

Combine meat with the rest of the onion, garlic, bell pepper, flour, and mushrooms into a bowl, and mix well. Spray a loaf pan with PAM or non-stick cooking spray and place the mixture into it. Spread the sauce over the top of the loaf and let it bake for 45 minutes to an hour on 350 degrees.  Let it cool for 5 to 10 minutes. Serve.
